Baljit Hira, the gourmet head chef of Empress, has been preparing mouth watering delectable dishes for the last 25 years. Having been born and raised in India, cooking is her innate hobby. She learned to cook and how to properly use a variety of herbs and spices from her mother, who is also an excellent cook. It was friends and well wishers like Sam Scicluna, a builder of numerous fine homes, who convinced Baljit to open an Indian restaurant. Baljit, reluctant at first, waited until her children were old enough before she ventured into the restaurant business.
